Ingredients

Main
  • 4 Chicken thighs bone-in and skin-on for maximum flavor
  • 3 tablespoons Olive oil to enhance the marinade
  • Juice of 2 Lemons for brightness
  • 4 cloves Garlic minced for robust flavor
  • 1 tablespoon Dried oregano a classic Greek herb
  • 1 teaspoon Salt to enhance all flavors
  • 1/2 teaspoon Black pepper for a hint of spice
  • 1 teaspoon Paprika for color and a smoky note
  • 2 tablespoons Fresh parsley chopped for garnish

Equipment

  • Mixing bowl
  • Whisk
  • Measuring cups and spoons
  • Large skillet or baking dish
  • Meat thermometer

Method

  1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, black pepper, and paprika. Whisk together until well blended.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Allow the chicken to marinate for at least 30 minutes or up to 4 hours in the refrigerator.
  3. Preheat your oven to 375°F (190°C) or heat a large skillet over medium-high heat.
  4. If using a skillet, place the marinated chicken thighs skin-side down and sear for about 5-7 minutes until the skin is golden brown.
  5. Transfer the chicken to the preheated oven or continue cooking in the skillet. Bake for 30-35 minutes until the internal temperature reaches 165°F (74°C).
  6. Remove the chicken from the oven or skillet and let it rest for about 5 minutes.
  7. Sprinkle fresh parsley over the chicken for garnish and serve.
