Ingredients

Main
  • 2 lbs beef chuck cut into 1-inch cubes
  • 1 tablespoon vegetable oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 3 cups beef broth
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 cups carrots sliced
  • 1 cup mushrooms sliced
  • 1 tablespoon cornstarch optional, for thickening
  • Salt and pepper to taste
  • Green onions for garnish

Equipment

  • Large heavy-bottomed pot or Dutch oven
  • Wooden spoon
  • Measuring cups and spoons
  • Knife and cutting board
  • Serving bowls

Method

  1. Chop the onion, mince the garlic, and grate the ginger.
  2. Heat the vegetable oil in a large pot over medium-high heat.
  3. Sear the beef cubes until browned on all sides.
  4. Add the chopped onion, garlic, and ginger to the pot and sauté for about 3-4 minutes.
  5. Pour in the beef broth and soy sauce, then stir in the brown sugar.
  6. Stir in the sliced carrots and mushrooms.
  7. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 2 hours.
  8. If desired, mix cornstarch with a little water and stir it into the stew to thicken.
  9. Remove from heat, season with salt and pepper, and serve hot, garnished with chopped green onions.

Notes

For a richer flavor, let the stew cool and refrigerate overnight. Reheating enhances the flavor.
