Ingredients

Main
  • 2 cups cooked risotto preferably chilled
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs
  • 2 cups vegetable oil for frying
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese optional

Equipment

  • Large mixing bowl
  • Frying pan or deep fryer
  • Cooking thermometer
  • Cookie sheet
  • Measuring cups and spoons
  • slotted spoon

Method

  1. Start with your favorite risotto recipe. The key is to let it cool completely; this helps the balls hold their shape.
  2. Once the risotto is cool, stir in the shredded mozzarella.
  3. With wet hands, take a handful of the risotto mixture and form a ball. Make sure to encase a small amount of cheese in the center.
  4. Prepare three bowls: one with flour, another with beaten eggs, and the last with breadcrumbs.
  5. Dredge each ball in flour first, then dip it in egg, and finally coat it with breadcrumbs.
  6. In a frying pan, heat the vegetable oil to 350°F (175°C).
  7. Carefully add the balls to the hot oil, a few at a time. Fry until they are golden brown, about 3-4 minutes.
  8. Use a slotted spoon to remove the balls and let them drain on paper towels. Serve them warm for the best experience.

Notes

Arancini Balls shine as a starter or snack. Pair them with a zesty marinara or a creamy dipping sauce.
