- Wash and dry the apples, core them, and cut into 1-inch chunks.
- Place the apple chunks and water in a medium saucepan and stir to combine.
- Heat over medium heat until the mixture comes to a gentle simmer, about 3 to 4 minutes.
- Add honey or maple syrup, ground cinnamon, lemon juice, and a pinch of sea salt, stirring to coat the apples evenly.
- Let the apples simmer, stirring occasionally and gently mashing with a potato masher, for 15 to 20 minutes until soft.
- For a smoother texture, blend the compote with an immersion blender or mash more vigorously to your desired consistency.
- Remove from heat, taste and adjust by adding more sweetener, lemon juice, or cinnamon if needed.
- Allow the compote to cool for 10 to 15 minutes, then transfer to glass jars and store in the refrigerator.
Notes
The compote thickens as it cools; it can be stored in airtight jars in the fridge for up to two weeks.
