Ingredients

Main
  • 1 5-7 pound prime rib roast
  • ¼ cup kosher salt
  • 1 tablespoon ground black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped

Equipment

  • Roasting pan
  • Meat thermometer
  • Plastic wrap
  • Oven
  • Large cutting board

Method

  1. Trim any excess fat from the prime rib.
  2. Rub the kosher salt all over the roast, covering it thoroughly.
  3. In a bowl, mix the pepper, garlic powder, rosemary, and thyme. Rub this mixture over the roast.
  4. Wrap the seasoned roast in plastic wrap and refrigerate overnight.
  5. Preheat your oven to 500°F (260°C).
  6. Place the prime rib on a roasting rack in a pan. Roast for 15 minutes.
  7. Reduce the temperature to 325°F (163°C) and continue cooking until the desired doneness is reached, about 2 hours for medium-rare.
  8. Use a meat thermometer to check the internal temperature; aim for around 130°F (54°C) for medium-rare.
  9. Remove the roast from the oven and let it rest for at least 20 minutes before slicing.

Notes

Serve with garlic mashed potatoes, roasted vegetables, or horseradish sauce.
