Ingredients

Main
  • 2 cups whole wheat flour
  • 1 teaspoon salt
  • 1 tablespoon oil for the dough
  • 3 medium potatoes boiled and mashed
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1 teaspoon red chili powder
  • 1 tablespoon chopped coriander leaves
  • Oil for deep frying

Equipment

  • Large mixing bowl
  • Rolling pin
  • Frying pan or wok
  • slotted spoon
  • Paper towels for draining
  • Mixing spoon

Method

  1. In a large mixing bowl, combine whole wheat flour and salt. Add oil to create a softer dough.
  2. Gradually add water and knead until you have a smooth, pliable dough. Let it rest for at least 15 minutes.
  3. In a separate bowl, mix the mashed potatoes with cumin seeds, garam masala, red chili powder, and chopped coriander.
  4. Divide the rested dough into equal portions and roll them into golf ball-sized balls.
  5. On a floured surface, roll each ball into a circle about 4 inches in diameter.
  6. Place a spoonful of the potato filling in the center of the rolled puri, gather the edges, and pinch to seal.
  7. In a frying pan, heat oil over medium-high heat until hot but not smoking.
  8. Carefully slide the filled puris into the hot oil and fry until they puff up and turn golden brown.
  9. Remove and drain on paper towels.

Notes

Serve with yogurt, pickles, or chutney for a complete meal.
