Ingredients

Main
  • 2 pounds pork shoulder thinly sliced
  • 1/4 cup pineapple juice
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup white onion finely chopped
  • 1 lime juiced
  • 12 corn tortillas
  • 1 cup fresh cilantro chopped
  • 1 cup pineapple diced
  • 1/2 cup salsa or hot sauce optional

Equipment

  • Grill or grill pan
  • Mixing bowl
  • Knife
  • Cutting board
  • Tongs
  • Meat thermometer

Method

  1. In a mixing bowl, combine pineapple juice, chili powder, cumin, oregano, minced garlic, salt, and pepper.
  2. Add the sliced pork to the marinade, ensuring each piece is well-coated. Let sit for at least 30 minutes or preferably overnight.
  3. Preheat your grill or grill pan over medium-high heat.
  4. Place the marinated pork slices on the grill. Cook for about 5-7 minutes on each side, or until the pork reaches an internal temperature of 145°F.
  5. During the last few minutes of cooking, add slices of pineapple to the grill.
  6. Warm the tortillas on the grill for about 30 seconds on each side.
  7. Remove the pork and pineapple from the grill and let rest for a few minutes. Chop into bite-sized pieces.
  8. Place chopped pork and pineapple on the warmed tortillas.
  9. Top each taco with chopped onion, cilantro, and a squeeze of lime juice.

Notes

For extra flavor, add pickled onions or a drizzle of your favorite hot sauce. Serve with sides like Mexican street corn or guacamole.
