Ingredients

Main
  • 2 pounds pork shoulder sliced thinly
  • 1/4 cup white vinegar
  • 1/4 cup orange juice
  • 1 tablespoon achiote paste
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1 cup pineapple diced
  • Tortillas for serving
  • Cilantro for garnish
  • Onion for garnish
  • Lime wedges for serving

Equipment

  • Blender or food processor
  • Mixing bowl
  • Skewers or grill
  • Sharp knife
  • Cutting board

Method

  1. In a blender, combine white vinegar, orange juice, achiote paste, garlic, cumin, oregano, chili powder, and salt to create a smooth marinade.
  2. Place the sliced pork shoulder in a mixing bowl and pour the marinade over it. Let it marinate in the fridge for at least one hour, preferably overnight.
  3. Thread the marinated pork onto skewers, interspersing with diced pineapple.
  4. Preheat the grill to medium-high heat.
  5. Place the skewers on the grill and cook for about 15-20 minutes, turning occasionally.
  6. Remove the skewers from the grill and let the meat rest for a few minutes.
  7. Slice the grilled pork and pineapple off the skewers and place them in warm tortillas.
  8. Top your tacos with fresh cilantro, diced onion, and a squeeze of lime.

Notes

Marinating overnight makes a huge difference in flavor, so plan ahead!
